Weights are estimates. Together, the ingredients weigh about 1.87 kg before cooking, which is about 310 g per serving.

Steps

  1. Heat the oven to 220°C (425 °F).

  2. Zest and juice the lemon. Finely grate the ginger and add it to a large mixing bowl with the remaining marinade ingredients: white miso, mirin, and maple syrup. Mix to combine.

  3. Add the salmon fillets to the marinade and toss well to coat. Set aside in the refrigerator; you can marinate for up to 24 hours in advance or use the salmon immediately.

  4. Put the frozen peas, edamame, and green beans in a baking tray. Slide the tray into the hot oven and bake the vegetables for 10 minutes.

  5. Meanwhile, finely grate the garlic into a small bowl. Stir the olive oil through it to make garlic oil.

  6. After 10 minutes, remove the vegetables from the oven. Pour the garlic oil over them, season with salt and black pepper, and toss together.

  7. Arrange the salmon on top of the vegetables, skin-side down. If any marinade remains, spoon it over the salmon.

  8. Return the tray to the oven and bake for 10–15 minutes, or until the salmon is cooked through. Very thick fillets may need longer; thinner fillets may need slightly less time.

  9. Serve with cooked rice for a quick meal, if desired.

Notes

Cooked salmon keeps in the refrigerator for 3–4 days or in the freezer for up to 3 months. Defrost frozen portions overnight in the refrigerator and reheat gently in a low oven, or flake the salmon cold into other dishes to avoid drying it out. The source does not specify a quantity for salt or black pepper, or the cooking method for the suggested rice.
