Black Sesame Peanut Butter Cookies

- 1 banana (very, very ripe)
- 2 tbsp black sesame powder
- 0.5 cup peanut butter (Teddy's brand recommended)
- 0.75 cup rolled oats
- 1 egg
- honey (to taste (eyeballed))
- cacao nibs (or chocolate chips, to taste (eyeballed))
- cinnamon (to taste (eyeballed))
- salt (to taste (eyeballed))
- cooking oil spray (for greasing the pan)

Preheat your oven to 350°F (175°C).

In a mixing bowl, place one very ripe banana and mash it thoroughly.

Add 2 tablespoons of black sesame powder, 1/2 cup of peanut butter, 3/4 cup of rolled oats, and 1 egg to the bowl.

Add honey, cacao nibs (or chocolate chips), cinnamon, and salt to taste.

Mix everything together and mash really well until a cohesive dough forms.

Prepare a baking sheet with parchment paper or aluminum foil. If using foil, spray with cooking oil to prevent sticking.

Scoop the dough onto the baking sheet. Since these cookies do not expand much, they can be placed relatively close together.

Bake at 350°F for 12 to 15 minutes, depending on your oven and desired level of crispiness.

Notes
