Crispy wheat tortilla triangles filled with sautéed chicken, mushrooms, caramelized onion, and a blend of melted cheeses. They can be prepared in an air fryer, oven, or frying pan/deep fryer.

Ingredients

  • 2 Chopped chicken breasts (Approximately 400 g total)
  • 1 tbsp Olive oil (For sautéing the chicken and mushrooms)
  • Salt (To taste)
  • Black pepper (To taste)
  • 1 puñado Sliced mushrooms (Approximately 75 g)
  • 2 tbsp Caramelized onion (Approximately 40 g)
  • 1 cuña Brie cheese (Approximately 125 g; remove the rind)
  • 1 tbsp Cream cheese (Generous tablespoon; approximately 30 g)
  • 100 g Shredded mozzarella
  • 4 Large wheat tortillas (Cut each tortilla in half)
  • 2 Eggs (Beaten)
  • 1 cup Crushed cornflakes (As needed to coat the triangles; approximately 80 g)
  • 1 tbsp Oil (For drizzling over the triangles before baking or air frying; for frying, use as much as needed)

Steps

    Heat a large frying pan over medium heat and add the oil. Add the chopped chicken, season with salt and pepper, and cook, stirring and breaking it up, until browned and almost completely cooked through, approximately 6–8 minutes.

    Add the sliced mushrooms to the pan. Sauté for 4–5 minutes, stirring occasionally, until tender and reduced in volume.

    Add the caramelized onion, rindless brie, cream cheese, and shredded mozzarella.

    Cook the mixture over medium-low heat, stirring continuously, until the cheeses have melted and the filling is creamy and well combined. Remove from the heat and let it cool slightly so it can be handled without tearing the tortillas.

    Cut the four wheat tortillas in half to make eight pieces. Place a portion of the filling on one side of each semicircle, leaving a small margin around the edges.

    Fold each tortilla into a triangular packet and tuck the edges inward to seal the filling well and prevent it from escaping during cooking.

    Dip each triangle into the beaten egg, coating both sides, then coat it with the crushed cornflakes. Press lightly so the coating adheres.

    Drizzle the triangles with a little oil. For the air fryer, cook them at 200 °C for 10 minutes, turning them halfway through cooking, until golden and crisp.

    Alternatively, preheat the oven to 220 °C, using conventional top-and-bottom heat without the fan. Place the triangles on the middle rack and bake for 10–15 minutes, until the surface is golden and crisp.

    You can also fry them in a frying pan or deep fryer with plenty of hot oil. Cook, turning once, until both sides are golden; drain on paper towels before serving.

Notes
