Coconut Cloud Protein Marshmallows

Ingredients
- 3 cup coconut milk (can use any milk of choice)
- 7 tbsp beef gelatin
- 0.75 cup unflavored whey protein powder (Prozis brand recommended)
- 0.5 cup monk fruit sweetener (Lakanto brand recommended)
- 1 tsp blue spirulina powder (for color)
- 1 tsp coconut extract (optional)

In a saucepan, whisk together the coconut milk and beef gelatin until fully combined.

Place the saucepan over medium-low heat and simmer gently, whisking constantly until the gelatin is completely dissolved. Do not let the mixture boil.

Carefully pour the warm milk and gelatin mixture into the bowl of a stand mixer.

Add the blue spirulina, whey protein, monk fruit sweetener, and coconut extract (if using) to the bowl.

Using the whisk attachment, beat on high speed for 8–12 minutes, or until the mixture becomes thick, glossy, and doubles to triples in size.

Line an 8x8-inch pan with parchment paper and immediately pour in the marshmallow mixture, smoothing the top with a spatula.

Refrigerate for 20–30 minutes, or until the marshmallows are completely set.

Slice into squares and enjoy!
Notes
Storage: Keep refrigerated in an airtight container for up to 5 days. Tip: Dust your knife with a little protein powder or arrowroot starch before slicing to help prevent sticking.
