Ingredients

  • 1.5 cup all-purpose flour (plus extra for dusting)
  • 1.5 tsp baking powder
  • 0.75 tsp salt
  • 0.5 cup water (plus a splash more if needed to hydrate dry bits)
  • 1 tbsp olive oil
  • 0.5 cup pizza sauce (homemade or store-bought)
  • 1.5 cup mozzarella cheese (shredded)
  • 2 oz pepperoni (sliced)
  • dried oregano (to taste)

    Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix the dry ingredients together thoroughly.

    In a separate jug or small bowl, combine the water and olive oil.

    Pour most of the wet ingredients into the dry ingredients, holding back a small amount in case it is not needed.

    Stir the mixture together. If the dough appears too dry, add the remaining liquid. If there are still dry floury bits, add an extra splash of water until the dough forms a cohesive ball.

    Use your hands to pull the dough together into a ball; the bowl should be relatively clean when the dough is properly mixed.

    Dust a clean counter surface with flour. Place the dough onto the counter.

    Using a rolling pin or your hands, roll the dough out into a circle approximately 12 inches in diameter. Keep the dough slightly thicker than a traditional yeasted dough as it will not rise as much.

    Transfer the rolled dough onto a 12-inch pizza tray. Use your fingers to push the dough to the edges and form a small crust around the perimeter.

    Spread the pizza sauce generously over the dough, leaving the crust edges clear.

    Sprinkle the shredded mozzarella cheese evenly over the sauce.

    Layer the pepperoni slices on top of the cheese and sprinkle with dried oregano.

    Bake in the preheated oven for 15 to 17 minutes, or until the cheese is bubbly and golden brown and the crust is cooked through.

    Remove from the oven, slice while warm, and serve.

Notes

This dough does not require rising time because it uses baking powder instead of yeast. If you don't want to bake it immediately, you can store the raw dough in a bag in the fridge. You can also divide the dough to make smaller individual pizzas.
