Whole Garlic Chicken Stir Fry

- 1 lb chicken breast or thighs (cut into bite-sized pieces)
- 15 garlic cloves (whole, peeled)
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 0.5 tsp black pepper
- 1 tbsp cooking oil (for frying)
- 2 tbsp water (for steaming garlic)
- 2 cup cooked rice (for serving)

In a small bowl, combine the dark soy sauce, light soy sauce, oyster sauce, sugar, and black pepper. Mix thoroughly until the sugar is dissolved and set the sauce aside.

Heat a tablespoon of oil in a pan or wok over medium heat.

Add the whole peeled garlic cloves to the pan and cook for a couple of minutes until they begin to take on some color.

Pour in a small amount of water (about 2 tablespoons) and cover the pan with a lid. Let the garlic steam for a few minutes until the cloves are tender.

Remove the tender garlic cloves from the pan and set them aside.

In the same pan, add the chicken pieces. Increase the heat slightly and brown the chicken for a few minutes until cooked through and golden.

Add the cooked garlic cloves back into the pan with the chicken.

Pour the prepared sauce mixture over the chicken and garlic.

Stir-fry the mixture constantly until the sauce thickens and coats the chicken and garlic evenly.

Serve the stir fry immediately over a fresh bowl of rice or enjoy it on its own.
Notes
The technique of steaming the garlic cloves with a bit of water ensures they are soft and buttery inside rather than crunchy or burnt. You can adjust the number of garlic cloves based on your preference.
