  • 0.25 cup Rib rub (containing garlic, paprika, brown sugar, and salt)
  • 0.5 cup BBQ sauce (for glazing)

Steps

    Prepare the ribs by addressing the membrane on the bone side. To remove it, use a butter knife to loosen the thin tissue at one end of the rack. Use a paper towel to get a firm grip and pull the membrane off completely.

    Apply a binder to the ribs to help the seasoning stick. Rub a thin layer of mustard or a high-smoke point oil (like avocado oil) over the entire surface of the meat.

    For smoking: Cook low and slow (typically around 225°F/107°C). Use the 3-2-1 method (3 hours unwrapped, 2 hours wrapped in heavy-duty aluminum foil, 1 hour unwrapped and sauced) for incredibly tender results.

    For grilling: Use the two-zone method with one side of the grill set for direct heat and the other for indirect heat. Cook over indirect heat to ensure the meat stays juicy, finishing over direct heat for a final char.

Notes
