Creamy Chicken with Mushrooms and Spinach

Ingredients
- 2 chicken breast (halved lengthwise to make 4 fillets)
- salt (to taste)
- black pepper (to taste)
- 2 tbsp olive oil
- 1 tbsp butter
- 250 g mushrooms (sliced)
- 3 cloves garlic (finely minced)
- 1 cup heavy cream (or whipping cream)
- 0.5 cup Parmesan cheese (grated)
- 2 cup fresh spinach (packed)

Season the chicken breast fillets generously with salt and pepper on both sides.

Heat the olive oil in a large skillet over medium-high heat.

Place the chicken in the skillet and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.

In the same skillet, add the butter and let it melt.

Add the sliced mushrooms and sauté until golden brown and their liquid has evaporated, about 5 minutes.

Stir in the minced garlic and cook for 1 more minute until fragrant, being careful not to burn it.

Pour in the heavy cream and bring to a gentle simmer. Reduce the heat to medium-low.

Add the grated Parmesan cheese and stir until the sauce thickens slightly.

Add the fresh spinach and stir until wilted and incorporated into the sauce.

Return the chicken to the skillet, spooning the sauce over it, and cook everything together for 2 minutes so the flavors can meld.
Notes
You can serve this dish over pasta, rice, or with steamed vegetables. If the sauce is too thick, thin it with a splash of milk or chicken broth.
