Ingredients

  • 500 g Pork ribs (chopped into bite-sized pieces)
  • 1 tsp Salt (for cleaning the ribs)
  • 1 tbsp All-purpose flour (for cleaning the ribs)
  • 2 tbsp Cooking oil
  • 2 Green onion (cut into sections)
  • 3 slice Ginger
  • 2 Star anise
  • 1 packet Sweet and sour sauce base (pre-mixed commercial sauce)
  • Boiling water (enough to submerge the ribs)
  • White sesame seeds (for garnish)

Steps

    Place the chopped pork ribs in a bowl. Add 1 tsp of salt and 1 tbsp of flour. Pour in clean water and scrub the ribs by hand for about 2 minutes to remove blood and impurities. Rinse thoroughly with clean water.

    Heat oil in a wok or pan over high heat. Add the cleaned ribs and stir-fry until they are golden brown on all sides.

    Add the green onion sections, ginger slices, and 2 star anise to the pan for aromatics.

    Pour in 1 packet of pre-mixed sweet and sour sauce. This ensures the correct balance of flavors without needing to measure sugar and vinegar separately.

    Pour in enough boiling water to just cover the ribs.

    Cover the pan with a lid and simmer over low-medium heat for 30 minutes.

Notes

The use of flour and salt to wash the ribs is a traditional Chinese technique to clean meat without parboiling, preserving more flavor. Using a pre-mixed sauce packet (often labeled as 'Tangcu' sauce) significantly simplifies the seasoning process.
