Ingredients

  • 8 Hot dogs (Standard wieners, sliced lengthwise into thin strips)
  • 0.5 cup Ketchup (Used to create the caramel glaze)
  • 0.25 cup Granulated sugar (For the caramel base)
  • 1 sheet Puff pastry (Thawed and cut to fit the pan)
  • 2 Shallots (Finely minced for the sauce)
  • 2 tbsp Dijon mustard (For the shallot mustard sauce)
  • 0.5 cup Heavy cream (For the sauce base)
  • 0.25 cup Fresh dill (Blended with oil for herb oil)
  • 0.25 cup Neutral oil (For the dill oil)
  • Microgreens (For garnish)

Steps

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

Prepare the 'wiener rose' by slicing hot dogs lengthwise into thin strips. Roll the strips tightly together into a large, flat spiral (rose shape) that fits the bottom of a small oven-proof skillet or Tatin mold. Use kitchen twine to secure the outer edge of the rose if necessary.

  3. 3

In a separate pan, combine sugar and a splash of water over medium heat to create a light caramel. Once golden, whisk in the ketchup to create a 'ketchup caramel'.

  4. 4

Pour the ketchup caramel into the bottom of the oven-proof skillet. Carefully place the hot dog rose on top of the caramel.

  5. 5

Drape a circular sheet of puff pastry over the hot dogs, tucking the edges down into the sides of the pan.

  6. 6

Bake in the preheated oven for 20-25 minutes, or until the puff pastry is deep golden brown and crisp.

  7. 7

While the tart bakes, prepare the dill oil by blending fresh dill and neutral oil in a food processor until bright green, then strain through a fine-mesh sieve.

  8. 8

Make the shallot mustard sauce by sautéing minced shallots in a small saucepan until translucent. Stir in the Dijon mustard and heavy cream, simmering until thickened slightly. Season to taste.

  9. 9

Remove the tart from the oven and let it rest for 5 minutes. Carefully invert the tart onto a serving plate so the hot dog rose is facing up.

  10. 10

To plate, pour a 'bath' of the shallot mustard sauce around the base of the tart. Dot the sauce with the dill herb oil, top the tart with microgreens, and serve warm.

Notes

The creator refers to the ketchup as 'Heinz 48' or 'artisanal ketchup caramel'. For the best visual effect, ensure the hot dog strips are sliced evenly so the 'rose' sits flat in the pan.
