A healthier version of crispy churros made in a waffle maker. No deep frying, no batter, and ready in minutes using rice paper for a chewy mochi-like texture.

Ingredients

  • 1 egg (can be omitted if necessary)
  • 0.25 cup water (milk also works, but water makes them crispier)
  • vanilla extract (a splash)
  • 4 rice paper sheets (2 per waffle)
  • cinnamon sugar (any sugar mixed with cinnamon for coating)
  • avocado oil (for greasing the waffle maker)

    Whisk the egg, water, and vanilla in a bowl until the mixture is smooth.

    Soak a sheet of rice paper in the liquid mixture and then fold it into quarters.

    Soak a second sheet of rice paper, wrap it around the first folded sheet, and fold again.

    Cut the folded rice paper into strips.

    Lightly grease the waffle maker with a little avocado oil.

    Place as many pieces as will fit in the waffle maker and cook for approximately 4 minutes until golden and crispy (flip and cook longer if necessary).

    Roll the churros in the cinnamon sugar while they are still hot. You can spray a little more oil if you want the sugar to adhere completely.

Notes

Pro tip: freeze the leftovers and reheat them in the air fryer later for instant churros.
