White Bean Pâté with Walnuts and Bacon

Ingredients
- 0.5 bunch Fresh dill (freshly picked, divided)
- 1 can Canned white beans (boiled, no added sugar; drained)
- 3 Hard-boiled eggs (boiled firm)
- 40 g Walnut kernels (provides texture and meaty flavor)
- 100 g Unsalted butter (82% fat content for creaminess)
- 0.5 tsp Salt (adjust to taste)
- 0.5 tsp Black pepper (adjust to taste)
- 30 g Sunflower oil (neutral oil preferred over olive oil for the base)
- 2 tbsp Lemon juice (to balance the fats and enhance flavors)
- 2 strips Bacon (fried until crispy and finely chopped)

- 2 cloves Garlic (grated)
- Hot pepper jam (for garnish and sweet-spicy contrast)
- Olive oil (for visual finish)

Place half a bunch of fresh dill at the base of a food processor or blender.

Add the drained canned white beans over the dill.

Add 3 hard-boiled eggs, 40 grams of walnut kernels, and 100 grams of butter to the processor.

Season with half a teaspoon each of salt and black pepper, then pour in 30 grams of sunflower oil.

Process the mixture until it reaches a very fine, smooth consistency, similar to mayonnaise.

Taste the mixture; add approximately 2 tablespoons of lemon juice and process briefly again to incorporate and balance the acidity.

In a separate pan, fry two strips of bacon until very crispy. Finely chop the crispy bacon.

Transfer the bean pâté to a mixing bowl. Add finely chopped red onion and most of the chopped bacon (reserve a little for garnish).

Grate two cloves of garlic directly into the bowl and mix everything together thoroughly with a spoon.

Plate the pâté and garnish with the reserved bacon, a few dollops of hot pepper jam, a sprinkle of fresh dill, and a light drizzle of olive oil.
Notes
The walnuts are a key secret ingredient that provides a meaty texture. The hot pepper jam is highly recommended for the final flavor profile. If you prefer not to use canned beans, you can soak and boil dried beans separately.
