Ingredients

  • 5 Russet potatoes (peeled and cut into chunks)
  • 0.5 cup Butter (salted, softened)
  • 0.5 cup Heavy cream (warmed)
  • 4 oz Cream cheese (softened)
  • 1 cup Sharp cheddar cheese (shredded)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tsp Garlic powder
  • Fresh chives (chopped, for garnish)

Steps

  1. 1

Place peeled and cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt.

  2. 2

Bring to a boil over medium-high heat and cook for 15-20 minutes, or until the potatoes are fork-tender.

  3. 3

Drain the potatoes thoroughly and return them to the pot or transfer to a large mixing bowl.

  4. 4

Add the butter, cream cheese, and heavy cream to the hot potatoes. Mash using a potato masher or electric hand mixer until smooth and creamy.

  5. 5

Fold in the shredded cheddar cheese, garlic powder, salt, and pepper. Continue mixing until the cheese is melted and incorporated.

  6. 6

Transfer to a serving dish and garnish with fresh chopped chives before serving.

Notes

For the smoothest texture, use a potato ricer instead of a masher. Ensure the cream is slightly warmed before adding to prevent cooling down the potatoes too quickly.
