Ingredients

  • 700 g blackberries
  • 75 g caster sugar (For the filling)
  • 2 tbsp cornflour (For the filling)
  • 1 lemon (Zest and juice)
  • 125 g butter (Cold and cubed)
  • 150 g plain flour (For the topping)
  • 50 g ground almonds
  • 50 g jumbo oats
  • 100 g demerara sugar (75 g in the topping and 25 g to scatter over the crumble)
  • 50 g light brown sugar
  • 0.5 tsp flaky salt
  • 250 ml whole milk (Half of the 500 ml milk-and-cream total)
  • 250 ml double cream (Half of the 500 ml milk-and-cream total)
  • 1 vanilla pod (Split; add pod and seeds to the milk and cream)
  • 6 egg yolks
  • 75 g caster sugar (For the custard)
  • 1 tsp cornflour (Optional; for the custard)
  • salt (A pinch, for the custard)

Steps

  1. 1

Toss the blackberries with 75 g caster sugar, the lemon zest and juice, and 2 tablespoons cornflour. Leave to macerate for 15 minutes.

  2. 2

Rub the cold cubed butter into the plain flour and ground almonds with your fingertips until coarse crumbs form, leaving a few pea-sized pieces of butter visible.

  3. 3

Stir in the jumbo oats, 75 g demerara sugar, light brown sugar, and flaky salt.

  4. 4

Squeeze the mixture into fistfuls, then break it apart into nuggets ranging from pea to hazelnut size. Freeze for 20 minutes.

  5. 5

Preheat the oven to 200°C (180°C fan) with a heavy tray inside.

  6. 6

Transfer the fruit to a wide baking dish, keeping it no deeper than 4 cm.

  7. 7

Scatter the chilled crumble topping loosely over the fruit, spreading it right to the edges.

  8. 8

Scatter 25 g demerara sugar over the topping.

  9. 9

Set the dish on the hot tray and bake for 30 minutes, until the topping is deep gold and the fruit bubbles thickly around the rim. Rest for 15 minutes.

  10. 10

While the crumble rests, put the whole milk, double cream, and split vanilla pod (including the seeds) in a saucepan. Heat gently until steaming, then cover and infuse for 20 minutes.

  11. 11

Whisk the egg yolks with 75 g caster sugar, the optional teaspoon of cornflour, and a pinch of salt.

  12. 12

Reheat the infused milk and cream. While whisking the yolk mixture continuously, slowly pour in about one third of the hot liquid to temper it.

  13. 13

Pour the tempered yolk mixture back into the saucepan. Stir constantly over low heat until the custard reaches 82°C, coats the back of a spoon, and a finger drawn through it leaves a clean channel.

  14. 14

Strain the custard straight into a cold jug.

  15. 15

Serve the crumble warm with the custard, so both arrive warm at the table.

  16. 16

If the custard splits, transfer it to a cold bowl and blend with a stick blender for 20 seconds to bring it back together.

Notes

The source says the custard cornflour is optional and describes it as insurance against curdling. It does not specify exact quantities for the milk and cream individually; they are divided equally from 500 ml total. The transcript mentions making extra crumble topping for freezing, but gives no additional quantities, so this is not included.
