Lucky Charms Protein Cookies
A high-protein, low-calorie version of sugar cookies topped with a creamy yogurt-based frosting and Lucky Charms marshmallows. Each cookie contains 13g of protein and only 150 calories.

Ingredients
- 1 cup all-purpose flour
- 1 scoop birthday cake or vanilla protein powder (approx. 30-35g)
- 0.33 cup sweetener (such as Truvia)
- 0.5 tbsp baking powder
- 0.25 tsp salt
- 1 egg (whole)
- 0.25 cup nonfat Greek yogurt (for the dough)
- 2 tbsp light butter (melted)
- 1 tsp vanilla extract
- almond extract (tiny bit)
- 1 tsp almond milk (tiny splash)
- 0.5 cup nonfat Greek yogurt (for the frosting)
- 2 tbsp zero sugar Cool Whip
- 0.25 scoop vanilla or birthday cake protein powder (for the frosting)
- 0.5 tbsp sugar-free vanilla pudding mix (dry mix)
- 1 tsp sweetener
- salt (pinch)
- Lucky Charms cereal (marshmallows for topping)

Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.

In a large mixing bowl, combine 1 cup all-purpose flour, 1 scoop protein powder, 1/3 cup sweetener, 1/2 tbsp baking powder, and 1/4 tsp salt.

Add 1 whole egg, 1/4 cup nonfat Greek yogurt, 2 tbsp melted light butter, 1 tsp vanilla extract, a tiny bit of almond extract, and a tiny splash (about 1 tsp) of almond milk to the dry ingredients.

Mix everything together until thoroughly combined. The batter may take a moment to come together, but continue mixing until smooth. If desired, fold in some sprinkles.

Using an ice cream scooper to avoid sticking, scoop the dough into 6 even portions onto the prepared cookie sheet.

Wet your hands with water and gently flatten each cookie scoop into a disk shape.

Bake at 350°F for 8-10 minutes. Remove from the oven and allow the cookies to cool completely before frosting.

While the cookies cool, prepare the frosting by mixing 1/2 cup nonfat Greek yogurt, 2 tbsp zero sugar Cool Whip, 1/4 scoop protein powder, 1/2 tbsp sugar-free vanilla pudding mix, 1 tsp sweetener, and a pinch of salt in a small bowl until smooth and thick.

Spread the frosting evenly over the cooled cookies.

Notes
