- 1 lb Boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 0.5 tsp Garlic Powder (for chicken seasoning)
- 0.5 tsp Onion Powder (for chicken seasoning)
- 0.5 tsp Paprika (for chicken seasoning)
- 0.25 tsp Salt (for chicken seasoning)
- 0.25 tsp Black Pepper (for chicken seasoning)
- 5.2 oz Boursin Garlic and Herb Cheese (one package)
- 8 oz Dry, Uncooked Orzo
- 1 cup Cherry Tomatoes (halved)
- 0.5 cup Oil-Packed Sun-Dried Tomatoes (chopped)
- 4.5 Garlic Cloves (minced)
- 0.5 cup Fresh Parmesan Cheese (plus more for serving)
- 1 tbsp Herbs De Provence or Italian Seasoning
- 0.5 tsp Garlic Powder (for the bake)
- 0.5 tsp Onion Powder (for the bake)
- 0.25 tsp Salt (for the bake)
- 0.25 tsp Black Pepper (for the bake)
- 1 cup Chicken Broth
- 1 cup Heavy Cream
- 2.5 cup Fresh Baby Spinach (chopped)
- Milk (a splash if needed to thin the sauce)
- Red pepper flakes (for serving)

Preheat the oven to 400°F (200°C).

Season the bite-sized chicken pieces with 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika, 1/4 tsp salt, and 1/4 tsp black pepper.

Place the 5.2 oz package of Boursin cheese in the center of a 9 x 13-inch baking dish.

Add the dry orzo, halved cherry tomatoes, chopped sun-dried tomatoes, minced garlic, 1/2 cup Parmesan, seasoned chicken, 1 tbsp Herbes de Provence, and the remaining garlic powder, onion powder, salt, and pepper around the cheese.

Pour in the 1 cup chicken broth and 1 cup heavy cream.

Gently stir the ingredients around the Boursin, making sure most of the orzo is covered by the liquid.

Cover the baking dish tightly with aluminum foil.

Bake for 40 minutes, or until the orzo is tender and the chicken reaches an internal temperature of 165°F (74°C).

Remove the foil and stir until the Boursin is fully incorporated and the sauce is creamy.

Stir in the chopped baby spinach until wilted.

If the sauce is thicker than desired, stir in a splash of milk.
