Ingredients
- 6 oz Bittersweet chocolate (chopped, at least 60% cacao recommended)
- 3 tbsp Unsalted butter (cut into pieces)
- 3 Large eggs (separated, room temperature)
- 0.25 tsp Cream of tartar (helps stabilize the egg whites)
- 0.25 cup Granulated sugar (divided)
- 0.5 cup Heavy cream (cold, for the mousse base)
- 0.5 tsp Vanilla extract
- 0.5 tsp Espresso powder (optional, enhances chocolate flavor)
- Salt (a pinch)

Place the chopped bittersweet chocolate and butter in a heat-proof bowl. Set the bowl over a saucepan of simmering water (double boiler), ensuring the bottom of the bowl does not touch the water.

Stir the chocolate and butter occasionally until completely melted and smooth. Remove from heat and stir in the espresso powder (if using) and a pinch of salt. Let the mixture cool slightly.

Whisk the egg yolks into the slightly cooled chocolate mixture one at a time until fully incorporated. Set aside.

In a separate clean bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.

Gradually add 2 tablespoons of the granulated sugar to the egg whites while continuing to beat on high speed until stiff, glossy peaks form. Do not overbeat.

In another bowl, whip the cold heavy cream with the remaining 2 tablespoons of sugar and the vanilla extract until it reaches stiff peaks.

Gently fold about one-third of the whipped egg whites into the chocolate mixture using a rubber spatula to lighten it up.

Fold in the remaining egg whites very gently until just a few streaks remain. Be careful not to deflate the mixture.

Gently fold the whipped cream into the mixture until no white streaks remain and the mousse is uniform in color.

Spoon or pipe the mousse into individual serving glasses or ramekins.

Cover with plastic wrap and refrigerate for at least 2 hours, or until set and chilled through.

Notes
For the best results, use high-quality chocolate rather than chocolate chips, as chips contain stabilizers that can affect the texture. Ensure your egg whites are at room temperature for maximum volume, but your heavy cream must be very cold to whip properly.
