Zucchini Wraps
A healthy, low-calorie zucchini wrap that can be used like a classic wrap or as a gluten-free pizza base. It's simple to make with just three main ingredients.

Ingredients
- 150 g zucchini (grated)
- salt (a generous pinch to draw out water from the zucchini)
- 1 egg
- 25 g flour of choice (wheat, oat, spelt, or buckwheat)
- pepper (to taste)
Steps

Grate your zucchini until you have about 150g of grated flesh.

Add a generous pinch of salt to the grated zucchini, mix, and let it sit for 5 minutes.

Vigorously squeeze the grated zucchini using a fine-mesh strainer or sieve to remove as much water as possible.

In a bowl, mix the squeezed zucchini with the egg, the flour of your choice, and a pinch of pepper.

Preheat the oven to 200°C (390°F).

Thinly spread the mixture onto a baking sheet lined with parchment paper, forming two circles for two wraps.

Bake for 15 minutes at 200°C.

Remove from the oven, add the toppings of your choice, and enjoy.
