Ingredients

  • 40 g Oat flour (The author recommends 20 g in Biscuit flavor and 20 g in Coffee & Caramel flavor.)
  • 100 g Egg whites
  • 50 g Greek yogurt
  • 0.33 bustina Idrolitina (Approximately one-third of a sachet.)
  • Water (As needed to activate the Idrolitina.)
  • 200 g Protein ricotta (Approximately 200 g; alternatively, use protein yogurt or any protein spreadable cheese of your choice.)
  • 15 g Honey
  • 2 gocce Vanilla sweetener
  • 2 gocce Chocolate protein-flavored sweetener
  • Caramel topping (Optional, as needed.)
  • Chocolate decorating pen (Optional, for decorating the Cucciolone lettering.)

Steps

  1. 1

Mix the Idrolitina with a little water and let it react.

  2. 2

Add the reacted Idrolitina to the oat flour, egg whites, and Greek yogurt. Mix until you have a smooth batter.

  3. 3

Pour the batter into a rectangular silicone mold.

  4. 4

Cook the batter in the microwave at 800 W for approximately 5 minutes.

  5. 5

Allow the cooked cookie to cool completely.

  6. 6

Meanwhile, prepare the filling by mixing the protein ricotta with the honey, vanilla sweetener, and chocolate protein-flavored sweetener.

  7. 7

Divide the cooled cookie into 2 pieces, then cut each piece in half to create the two layers for each Cucciolone.

  8. 8

Fill the layers with the ricotta filling.

  9. 9

If desired, add a little caramel topping.

  10. 10

Close each Cucciolone with the second layer and trim the edges.

  11. 11

Place the two Cuccioloni in a baking dish or rectangular container, keeping them as stable as possible.

  12. 12

Let them firm up in the freezer for approximately 3 hours.

  13. 13

Before eating, if they are too hard, leave them out of the freezer for approximately 30 minutes, transfer them to the refrigerator for 1-1.5 hours, or microwave them for approximately 30 seconds, until they become softer and easier to bite into.

  14. 14

If desired, decorate the surface with the iconic Cucciolone lettering using a chocolate decorating pen.

Notes

The caramel topping and chocolate pen decoration are optional. The total time includes approximately 3 hours in the freezer. The source does not specify the dimensions of the rectangular mold or the weight of the Idrolitina sachet.
