Oven-roasted carrots are tossed with a sticky honey-garlic butter glaze, then finished with lemon juice for brightness and optional parsley. Roasting brings out the carrots’ sweetness and creates browned, caramelized spots.

Steps
Arrange a rack in the middle of the oven and heat the oven to 425°F (220 °C). Place the peeled, cut carrot pieces on a rimmed baking sheet.
Melt the unsalted butter in a small saucepan over medium heat.
Add the minced garlic and cook, swirling the pan occasionally, until fragrant, about 30 seconds.
Remove the saucepan from the heat. Add the honey and whisk until the glaze is combined.
Drizzle half of the honey glaze over the carrots and toss to coat.
Season the carrots with the kosher salt and black pepper, then toss again to coat.
Spread the carrots into an even layer on the baking sheet.
Roast for 15 minutes.
Toss the carrots, then return them to the oven and roast for 15 to 20 minutes more, until tender and the bottoms are browned.
Drizzle the remaining honey glaze over the roasted carrots. Squeeze the lemon juice over them and toss to coat.
Transfer the carrots to a serving bowl and garnish with chopped fresh parsley leaves, if using.
Notes
Make ahead: The carrots can be peeled and chopped up to 1 day ahead and refrigerated in an airtight container. Storage: Refrigerate leftovers in an airtight container for up to 5 days.
