Ingredients

  • 1 brown onion (medium, quartered)
  • 3 cloves garlic (peeled)
  • 20 g olive oil
  • 150 g cured chorizo (thinly sliced into bite-sized pieces)
  • 400 g chopped tomatoes (canned; the author used Ardmona brand)
  • 200 g water
  • 50 g tomato paste
  • 20 g Worcestershire sauce (the author uses gluten-free Worcestershire sauce)
  • 20 g maple syrup (optional; included for the low-sugar variation in the source)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • black pepper (a pinch)
  • 800 g cannellini beans (canned, drained and rinsed; approximately 480 g drained weight)

Steps

  1. 1

Place the quartered onion and peeled garlic in the Thermomix mixer bowl. Chop for 3 seconds on speed 6 with the measuring cap on. Scrape down the sides of the bowl; extend the chopping time if needed.

  2. 2

Add the olive oil and cook for 5 minutes at 100°C / 212°F on speed 1, with the measuring cap off.

  3. 3

Add the sliced chorizo, chopped tomatoes, water, tomato paste, Worcestershire sauce, maple syrup if using, smoked paprika, salt, and pepper. Cook for 15 minutes at steaming temperature on speed 1, with the measuring cap off. Place the simmering basket over the opening to help prevent splashing.

  4. 4

Add the drained and rinsed cannellini beans. Cook for a further 3 minutes at 100°C / 212°F on speed 1, with the measuring cap off. Keep the simmering basket over the opening to prevent splashing.

Notes

The recipe is designed for a Thermomix and reheats well in the microwave. For Bellini machines, use the blunt blade; use the stated alternative temperatures for Intelli or Supercook models. The source also suggests omitting the chorizo for a vegetarian or vegan version, although Worcestershire sauce should be checked or replaced for a fully vegan preparation. For the low-carb variation, use 200 g small cauliflower florets, mushrooms, or zucchini instead of the beans, cook for 5 minutes, and omit the Worcestershire sauce and maple syrup if required.
