Cinnamon Crunch Peach Muffin Bread

- 0.75 cup brown sugar (for the batter)
- 2 tsp vanilla extract
- 1 cup Greek yogurt
- 3 eggs
- 2 cup all-purpose flour (for the batter)
- 2 tsp baking powder
- 1 tsp cinnamon

- 2 fresh peaches (finely chopped)

- 0.33 cup peach jam
- 1 fresh peach (sliced, for topping)

Preheat your oven to 350°F (175°C) and grease a standard bread loaf pan.

In a large mixing bowl, combine the melted butter, brown sugar, vanilla extract, one cup of Greek yogurt, and three eggs. Whisk until smooth.

Add the dry ingredients (flour, baking powder, cinnamon, and salt) to the wet mixture. Stir until just combined.

Gently fold in the finely chopped sweet peaches.

Prepare the cinnamon crunch topping by mixing together brown sugar, butter, and a little flour in a small bowl until it forms a crumble consistency.

Scoop the batter into the prepared bread pan.

Top the batter with dollops of peach jam, the prepared cinnamon crumble, and fresh peach slices.

Bake in the oven for approximately 60 minutes until a toothpick inserted in the center comes out clean.

Notes
For the best flavor, ensure the peaches are very sweet and ripe. If slicing while warm, the bread will be steaming and pairs perfectly with salted butter.
