Ingredients

  • 3 cup Fruit of choice (The author's favorite combination is half strawberries and half mango; use about 1 1/2 cups of each. If using frozen fruit, thaw completely first.)
  • 2 tbsp Lemon juice
  • 1 tbsp Lime juice
  • 0.5 tbsp Honey (Use organic when possible.)

    Preheat the oven to 170°F (about 75°C). Line a baking sheet with parchment paper, ensuring the parchment lies flat and covers the surface completely.

    Add the fruit, lemon juice, lime juice, and honey to a blender. Blend until completely smooth, stopping to scrape down the sides if needed.

    Pour the smooth fruit mixture onto the parchment-lined baking sheet. Use the back of a spoon to spread it into an even layer across the sheet; avoid leaving thin or thick spots, which will dry at different rates.

    Place the baking sheet in the preheated oven and bake for about 5 to 6 hours. After the first 3 hours, check the fruit leather every hour.

    Continue drying until the surface is no longer tacky to the touch and the sheet feels set and pliable rather than wet. The exact drying time may vary with the fruit's water content and the thickness of the layer.

    Remove the fruit leather from the oven and let it cool completely on the baking sheet.

    Cut the cooled fruit leather into strips, then roll each strip tightly.

Notes

Store the rolled fruit leather in an airtight container at room temperature for up to 1 month. Frozen fruit may be used, but it must be thawed first or the mixture will be too cold and wet to dry properly. Use organic ingredients when possible.
