One Pan Marry Me Prawn Pasta

Ingredients
- 400 g King Prawns (peeled and deveined)
- 1 tsp Garlic Powder (for seasoning prawns)
- 1 tsp Paprika (for seasoning prawns)
- Salt (sprinkle for prawns)
- Black Pepper (sprinkle for prawns)
- 1 tbsp Cornflour (to coat prawns)
- 1 tbsp Butter (one knob for frying prawns)
- 2 tbsp Olive Oil
- 4 Garlic Cloves (minced)
- 1 cup Cherry Tomatoes (one handful)
- 6 Sun-dried Tomato Pieces (minced)
- 600 ml Vegetable Stock (550-600ml)
- 150 ml Single Cream (use double cream for a richer sauce)
- 1 tsp Paprika (for the sauce)
- 1 tsp Red Chilli Flakes
- 1 tsp Dried Thyme (adjust as needed)
- 220 g Pasta (dry weight)
- Hard Cheese (such as Parmesan, for finishing)
- Fresh Parsley (chopped for garnish)

In a bowl, combine the king prawns with 1 tsp garlic powder, 1 tsp paprika, a sprinkle of salt and pepper, and 1 tbsp cornflour. Mix well until the prawns are evenly coated.

Heat a knob of butter in a large pan over medium-high heat. Add the seasoned prawns and cook until they are 'crusty' and golden on the outside. Remove the prawns from the pan and set aside, leaving the browned bits (fond) in the pan for flavor.

In the same pan, add 2 tbsp olive oil and the 4 minced garlic cloves. Sauté for about one minute until fragrant.

Add a handful of cherry tomatoes and a touch of salt. Add a splash of water to help deglaze the pan, scraping up the browned bits from the prawns.

Add the 6 minced sun-dried tomato pieces to the pan and cook for a couple of minutes.

Pour in 550-600ml of vegetable stock and 150ml of single cream. Stir in 1 tsp paprika, 1 tsp red chilli flakes, and 1 tsp dried thyme.

Add 220g of dry pasta directly into the liquid. Bring to a simmer over medium-high heat.

Simmer for 10 to 12 minutes, stirring occasionally to ensure the pasta doesn't stick, until the pasta is cooked through and the sauce has thickened and become creamy.

Taste and add a final touch of salt and pepper if needed. Return the cooked prawns to the pan and stir to warm through.

Finish the dish by stirring in a bit of hard cheese (or Parmesan) and fresh parsley before serving.
Notes
The 'one pan' method relies on the starch from the pasta to thicken the sauce as it cooks. If the liquid reduces too quickly before the pasta is tender, add a small splash more stock or water. For a richer flavor, use double cream instead of single cream.
