Ingredients

  • 1.5 lb Beef (sliced into thin strips (such as flank steak or sirloin))
  • 0.5 cup Soy sauce (for the sauce base)
  • 2 tbsp Honey (or brown sugar for sweetness)
  • 1 tbsp Sesame oil
  • 1 tsp Ginger (freshly grated)
  • 3 Garlic (cloves, minced)
  • 1 Onion (sliced)
  • 2 Bell peppers (sliced)
  • 2 Carrots (peeled and sliced into rounds or matchsticks)
  • 2 cup Broccoli florets (added at the end)

Steps

    In the slow cooker, whisk together the soy sauce, honey, sesame oil, and grated ginger to make the sauce directly in the crock pot.

    Add the minced garlic, sliced onion, bell peppers, and carrots to the sauce.

    Add the sliced beef to the slow cooker and stir until the meat and vegetables are well coated in the sauce.

    Cover and cook on high for 2 to 3 hours, or on low for 4 to 6 hours, until the beef is tender.

    If you are using broccoli, stir in the florets during the last 15 minutes of the cooking time to ensure they stay crisp-tender.
