Crispy Flourless Chicken Empanada
Individual ground chicken empanada stuffed with Havarti cheese and tomato, coated in a crispy mixture of cornflakes and Parmesan. Cooked in an air fryer alongside frozen vegetables for an easy, high-protein, gluten-free dinner.

Ingredients
- 300 g Ground chicken
- 20 g Grated Parmesan cheese
- 40 g Cornflakes (Crushed; check that they are certified gluten-free if necessary.)
- 0.5 Tomato (Sliced.)
- 1 rebanada Light Havarti cheese (Divide the slice into two halves to place on either side of the tomato.)
- 300 g Mixed frozen vegetables (Cooked alongside the empanada.)
- Ground black pepper (To taste.)
- Salt (To taste.)

Place the ground chicken in a bowl. Add ground black pepper and salt to taste, and mix until the seasonings are evenly distributed.

Spread the mixture over a sheet of parchment paper. Shape it into a rectangle, aiming for an even thickness of approximately 1 cm.

At one end of the rectangle, place half a slice of Havarti cheese, the tomato slices, and the other half of the cheese slice.

Use the parchment paper to fold the meat over the filling, as if forming an empanada. Press all the edges firmly to seal them and prevent the cheese from leaking out.

Crush the cornflakes until they have a breading-like texture, with some small pieces remaining. Mix them with the grated Parmesan.

Coat the chicken empanada completely with the cornflake and Parmesan mixture, pressing gently so the coating adheres.

Place the empanada in the air fryer basket or on the air fryer surface along with the frozen vegetables. Cook at 180 °C for 18 minutes, until the chicken is fully cooked and the coating looks golden and crispy. If using a thermometer, the center of the chicken should reach 74 °C.

Alternatively, bake the empanada at 180 °C for approximately 22 minutes, until cooked through and golden.
Notes
You can substitute ground turkey, pork, or beef for the chicken. To keep the recipe gluten-free, use certified gluten-free cornflakes and check the labels of the cheese and frozen vegetables. The original recipe specifies cooking the vegetables alongside the empanada; the cooking time may vary depending on the size of the pieces and the air fryer model.
