Fluffy chocolate chip pancakes
Very thick and fluffy pancakes made with Greek yogurt and plenty of dark chocolate chips. They are cooked in a nonstick pan without adding fat for an even golden-brown color.

Ingredients
- 90 g wheat or oat flour
- 120 g plain Greek yogurt
- 1 egg
- 15 g erythritol
- 12 g extra-virgin olive oil (EVOO)
- 4 g baking powder
- 40 g dark chocolate chips

In a bowl, mix the flour, erythritol, and baking powder until the dry ingredients are evenly distributed.

In another bowl, whisk the egg with the extra-virgin olive oil and plain Greek yogurt until smooth.

Pour the wet ingredients into the dry ingredients. Mix gently, just until combined, to obtain a fairly thick batter; do not overmix.

Add the dark chocolate chips and fold them in with gentle, brief movements, taking care not to work the batter too much.

Heat a nonstick pan over medium heat until very hot. Do not add oil or any other fat to the pan.

Add small portions of batter to the pan, leaving space between them so they can be flipped. Cover the pan and cook for about 2 minutes, until the underside is golden brown and the surface begins to set.

Flip each pancake with a spatula. Cover again and cook for another 2 minutes, or until golden brown and fluffy on both sides.

Remove the pancakes from the pan and serve immediately.
Notes
Do not overmix the batter, as this can make the pancakes less fluffy. The pan should be very hot before adding the batter and should not be greased, so the pancakes develop an even color.
