- 1 cup Reserved pasta water (Use as needed to loosen the sauce; the cooking water should be salted)

Bring a large pot of generously salted water to a boil. Add the pasta and cook according to the package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water.

While the pasta cooks, make the bread-crumb infusion: combine the toasted bread with the extra-virgin olive oil and walnuts, and blend or process until the mixture is finely crumbly and fragrant.

Add the ricotta, basil leaves, grated Parmigiano-Reggiano, garlic, and a pinch of nutmeg to the blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.

Taste the ricotta pesto and season with salt. If it is too thick to coat the pasta, blend in a small splash of the reserved pasta water.
