Ingredients
- 1.25 cup all purpose flour
- 1 cup plain greek yogurt (non fat or full fat works)
- 1 tsp baking powder
- 0.25 cup butter (melted)
- 0.25 cup brown sugar
- 3 tbsp granulated sugar
- 1 tbsp cinnamon
- 0.5 cup powdered sugar
- 1 tsp milk (some users suggest 1 tbsp for better consistency)
Steps
- 1
Preheat your oven to 375°F (190°C).
- 2
In a medium bowl, add the 1 1/4 cups all purpose flour and 1 tsp baking powder. Mix these dry ingredients together thoroughly.
- 3
Add 1 cup of plain Greek yogurt to the flour mixture. Mix in the bowl until a shaggy dough forms.
- 4
Transfer the dough to a clean, lightly floured surface. Knead the dough for approximately 5 minutes, or until it becomes smooth and elastic.
- 5
Optional: Let the dough rest for about 5 minutes to allow the flour to fully hydrate.
- 6
Cut the dough into 14-16 equal pieces and roll each piece into a smooth ball.
- 7
Place the dough balls into a lined baking dish, arranging them so they are touching.
- 8
In a small bowl, combine the 1/4 cup melted butter, 1/4 cup brown sugar, 3 tbsp granulated sugar, and 1 tbsp cinnamon to create the glaze.
- 9
Pour or brush the cinnamon sugar glaze evenly over the top of the dough balls in the baking dish.
- 10
Bake at 375°F for 35 minutes, or until the bread is golden brown and cooked through.
- 11
Remove from the oven and allow the monkey bread to cool in the dish for 20 minutes.
- 12
While cooling, whisk together 1/2 cup powdered sugar and 1 tsp milk (add more milk if needed to reach desired consistency) to make the icing.
- 13
Drizzle the icing over the cooled monkey bread before serving.
Notes
The dough is based on the 'two-ingredient bagel' method. If the icing is too thick with only 1 tsp of milk, add more milk 1/2 teaspoon at a time until it reaches a drizzling consistency.
