Bang Bang Shrimp Salad with Crispy Rice

Ingredients
- 2 cup cooked jasmine rice (preferably day-old)
- 1 tbsp chili crunch (chili oil crunch)
- 1 tsp sesame oil
- 3 tsp granulated sugar (divided)
- 2 tbsp rice vinegar
- 32 shrimp (peeled and deveined)
- 3 tbsp cornstarch (cornstarch)
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp salt
- 2 tsp black pepper
- 1 tsp smoked paprika (paprika)
- 3 tbsp avocado oil (for frying)
- 1 cucumber (diced)
- 1.5 cup edamame (cooked and shelled)
- 1 bunch scallions (chopped)
- 2 tbsp furikake (seaweed and sesame seasoning)
- 0.33 cup Kewpie mayonnaise (Japanese mayonnaise)
- 3 tbsp sriracha
- 2 tbsp sweet chili sauce (sweet chili sauce)
- 2 tsp white sesame seeds (for garnish)

In a bowl, mix the cooked jasmine rice with the chili crunch, sesame oil, 1 teaspoon of sugar, and rice vinegar until well combined.

Spread the rice in an even layer on a baking sheet or large skillet and cook over medium-high heat until the bottom is golden and crispy. Remove from heat and let cool slightly before breaking into bite-sized pieces.

In a medium bowl, combine the cornstarch, onion powder, garlic powder, salt, black pepper, and smoked paprika.

Pat the shrimp dry with a paper towel and toss in the cornstarch mixture until completely coated.

Heat the avocado oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until golden brown and crispy.

To prepare the Bang Bang sauce, whisk together the Kewpie mayonnaise, sriracha, sweet chili sauce, and the remaining 2 teaspoons of sugar in a small bowl.

In a large salad bowl, combine the crispy rice pieces, fried shrimp, diced cucumber, edamame, and scallions.

Pour the sauce over the salad and toss gently to coat all ingredients.

Finish by sprinkling the furikake and white sesame seeds on top before serving.
Notes
For crispier rice, ensure it is well-chilled before mixing with seasonings and frying. You can substitute avocado oil with any neutral oil with a high smoke point.
