Ingredients
- 3.5 lb pork loin roast (Source gives a range of 3–4 lb; use one roast.)
- 12 oz Coca-Cola (One can.)
- 1 cup ketchup
- 1 cup packed brown sugar
- 1 onion (Medium, finely chopped.)
- 2 cloves garlic (Minced.)
- 1 tbsp Worcestershire sauce
- 1 tsp mustard powder
- 1 tsp salt
- 0.5 tsp black pepper
Steps
- 1
Preheat the oven to 325°F (165°C).
- 2
Place the pork loin roast in a roasting pan.
- 3
In a bowl, whisk together the Coca-Cola, ketchup, packed brown sugar, chopped onion, minced garlic, Worcestershire sauce, mustard powder, salt, and black pepper until the sauce is thoroughly combined and the sugar is incorporated.
- 4
Pour the sauce over the pork loin, turning the roast as needed so it is evenly coated on all sides.
- 5
Cover the roasting pan tightly with aluminum foil. Roast for 1 to 1½ hours, or until the pork is nearly cooked through.
- 6
Remove the foil. Baste the pork generously with the sauce from the pan.
- 7
Continue roasting uncovered for 25–35 minutes, basting as needed, until the glaze has thickened and the center of the pork reaches 145°F (63°C) on an instant-read thermometer.
- 8
Transfer the pork loin to a cutting board and let it rest for 10 minutes so the juices can redistribute.
- 9
Slice the rested pork loin and serve it with the warm glaze spooned over the top.
Notes
Use an instant-read thermometer and remove the pork from the oven when the center reaches 145°F (63°C) to keep it tender and juicy. The source specifies a 3–4 lb roast, so cooking time may vary; rely on the internal temperature rather than time alone.
