Ingredients

  • 1 ripe banana (mashed)
  • 0.5 cup peanut butter
  • 0.33 cup maple syrup
  • salt (pinch)
  • cinnamon (to taste)
  • 0.75 cup oats (blended into flour)
  • 0.5 cup almond flour
  • 2 scoops protein powder (flavor of choice, typically vanilla or unflavored)
  • 1 banana (sliced for middle layer)
  • 3.5 oz dark chocolate (for melting)

Steps

  1. 1

In a large mixing bowl, mash one ripe banana until smooth.

  2. 2

Add the peanut butter, maple syrup, a pinch of salt, and cinnamon to the mashed banana and stir until well combined.

  3. 3

Stir in the oat flour (blended oats), almond flour, and protein powder. Mix until a thick, dough-like consistency forms.

  4. 4

Press half of the dough mixture into the bottom of a lined loaf pan or square container to form an even base layer.

  5. 5

Place the sliced banana pieces in a single layer over the base.

  6. 6

Spread the remaining dough mixture over the banana slices, pressing down gently to seal.

  7. 7

Melt the dark chocolate in the microwave or using a double boiler until smooth.

  8. 8

Pour the melted chocolate over the top layer and spread evenly.

  9. 9

Place the container in the fridge for at least 30 minutes to allow the chocolate to set and the bars to firm up before slicing.

Notes

Store these bars in an airtight container in the refrigerator for up to 5 days. For the best texture, use a protein powder that isn't too drying; if the mixture is too crumbly, add a splash of almond milk.
