Ingredients
- 0.75 cup cottage cheese
- 0.333 cup smooth peanut butter
- 0.25 cup maple syrup
- vanilla bean paste (to taste)
- 1 cup almond flour
- 0.333 cup cocoa powder
- salt (a pinch)
- 0.5 cup dark chocolate (melted, for coating)
- 1 tsp coconut oil (for the chocolate coating)

In a blender or food processor, combine 3/4 cup cottage cheese, 1/3 cup smooth peanut butter, 1/4 cup maple syrup, and a splash of vanilla bean paste.

Blend the mixture until it is completely smooth and creamy.

Transfer the blended mixture to a bowl and add 1 cup almond flour, 1/3 cup cocoa powder, and a pinch of salt.

Stir the dry ingredients into the wet mixture until a thick, dough-like consistency forms.

Roll the dough into bite-sized balls (approximately 12 balls).

In a small microwave-safe bowl, melt the dark chocolate with 1 teaspoon of coconut oil in 30-second intervals until smooth.

Place the balls in the refrigerator for at least 30 minutes to allow the chocolate to set before serving.
Notes
If the dough is too soft to roll, chill it in the fridge for 20 minutes before forming the balls. Store in an airtight container in the refrigerator for up to one week.
