Ingredients

  • 300 g Bacon (Finely diced)
  • 1 Onion (Large, finely diced)
  • Black pepper (Lots, freshly ground; to taste)
  • 1 tsp Garlic powder
  • 2 tbsp Apple cider vinegar
  • 100 ml Bourbon
  • 1 Orange juice (Juice of 1 large orange)
  • 100 g Brown sugar (Approximately; to taste)
  • Brioche or potato buns (For burger assembly; amount not specified)
  • Dry-aged beef patties (For burger assembly; amount and cooking method not specified)
  • Provolone cheese (For burger assembly; amount not specified)
  • Cheddar cheese (For burger assembly; amount not specified)
  • Mayonnaise (For burger assembly; amount not specified)
  • Dijon mustard (For burger assembly; amount not specified)
  • Whole grain mustard (For burger assembly; amount not specified)
  • Pickled jalapeños (For burger assembly; amount not specified)

Steps

  1. 1

Finely dice the bacon. Place it in a cold pan and set the pan over low heat, allowing the fat to render slowly.

  2. 2

When the bacon is golden and crispy, remove it from the pan and set it aside, leaving the rendered fat in the pan.

  3. 3

Add the finely diced onion to the pan. Cook it slowly until soft, golden, and caramelised.

  4. 4

Return the bacon to the pan.

  5. 5

Add the freshly ground black pepper, garlic powder, apple cider vinegar, bourbon, brown sugar, and orange juice.

  6. 6

Simmer gently until the liquid reduces and the mixture becomes thick, glossy, and jam-like.

  7. 7

Taste the marmalade and adjust the sweetness and pepper to your liking.

  8. 8

Allow the marmalade to cool completely before assembling the burgers.

  9. 9

Assemble the burgers with brioche or potato buns, dry-aged beef patties, provolone and cheddar cheeses, mayonnaise, Dijon and whole grain mustards, and pickled jalapeños. The source does not specify how to cook the patties or the order of assembly.

Notes

The source gives no quantities for the burger assembly ingredients and does not specify patty-cooking or burger-assembly details. Marmalade cook time and cooling duration are not specified.
