Ingredients
- 2 chicken breasts (seasoned with fajita seasoning, BBQ sauce, honey, and chilli flakes)
- 2 tbsp fajita seasoning (divided; 1 tbsp for chicken, 1 tbsp for onions/peppers)
- 1 tbsp BBQ sauce (Heinz brand recommended)
- 2 tbsp honey (divided; 1 tbsp for chicken, 1 tsp for onions/peppers)
- 1 tsp chilli flakes (plus extra for garnish)
- 2 potatoes (chopped into cubes)
- 1 tbsp roast potato seasoning
- 1 tbsp chicken seasoning (Aldi brand recommended)
- oil (for drizzling potatoes and greasing the pan)
- 0.5 head romaine lettuce
- 8 tomatoes (for salsa)
- 0.25 red onion (for salsa)
- lime juice (for salsa)
- salt (to taste for salsa)
- black pepper (to taste for salsa)
- parsley (for salsa and garnish)
- 1 onion (sliced)
- 1 bell pepper (sliced)
- 2 tbsp guacamole
- 2 tbsp cheese

Chop the 2 potatoes into cubes and place them in the air fryer basket.

Drizzle the potatoes with oil and add 1 tbsp roast potato seasoning and 1 tbsp chicken seasoning.

Shake the basket until the potatoes are evenly coated, then cook in the air fryer for 25 minutes at 185°C.

Place the 2 chicken breasts in a large bowl. Add 1 tbsp fajita seasoning, 1 tbsp BBQ sauce, 1 tbsp honey, and 1 tsp chilli flakes.

Stir the chicken until thoroughly coated in the marinade.

Add the chicken to the air fryer and cook for 18 minutes at 185°C.

While the chicken and potatoes cook, chop the onion and bell pepper into slices.

Add the sliced onion and pepper to an oiled pan over medium heat and cook for 5 minutes.

Add 1 tsp honey and 1 tbsp fajita seasoning to the pan. Continue cooking for a further 10-15 minutes until the vegetables are caramelized.

Prepare the salsa by combining 8 chopped tomatoes, 1/4 finely diced red onion, lime juice, salt, pepper, and chopped parsley.

Shred the romaine lettuce and prepare the guacamole.

Once all components are cooked, assemble the bowls by plating the potatoes, chicken, caramelized vegetables, lettuce, and salsa.

Top each bowl with guacamole and cheese, and finish with a sprinkle of chilli flakes and fresh parsley.
Notes
The recipe uses Celsius for temperatures (185°C). Ensure chicken reaches an internal temperature of 165°F (74°C).
