Ingredients

  • 8 oz unsalted butter (softened)
  • 8 oz cream cheese (softened)
  • 2 cup all-purpose flour (plus more for dusting)
  • 3 tbsp granulated sugar
  • 1.5 tsp ground cinnamon
  • 0.5 tsp kosher salt
  • 0.5 cup fruit jam or preserves (such as blueberry, cherry, or a combination)
  • 2 tsp all-purpose flour (for the filling)
  • 1 egg (beaten (or egg white))
  • Turbinado or raw sugar (for sprinkling)

Steps

  1. 1

In a large bowl or stand mixer, cream together the softened butter and cream cheese until smooth and well combined.

  2. 2

Add 2 cups of all-purpose flour, granulated sugar, ground cinnamon, and kosher salt to the butter mixture. Mix until a soft dough forms.

  3. 3

Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour to firm up.

  4. 4

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  5. 5

In a small bowl, stir together the fruit jam and 2 teaspoons of flour. This helps thicken the jam so it doesn't run during baking.

  6. 6

On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness. Use a round cookie cutter to cut out circles and place them on the prepared baking sheet.

  7. 7

Place a small spoonful (about 1-2 teaspoons) of the jam mixture into the center of each dough circle.

  8. 8

Roll out the second disc of dough and cut into thin strips. Weave the strips over the jam-topped circles to create a lattice pattern.

  9. 9

Trim the excess lattice strips and press the edges to seal the cookies.

  10. 10

Brush the lattice tops with the beaten egg and sprinkle generously with turbinado sugar.

  11. 11

Bake for 12-15 minutes, or until the edges are golden brown and the pastry is cooked through.

  12. 12

Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure the butter and cream cheese are truly softened to avoid lumps in the dough. If the dough becomes too soft while working, return it to the fridge for 10-15 minutes.
