Clean and trim the chicken thighs.

In a bowl, combine the chicken with the soy sauce, oyster sauce, sesame oil, 3 minced garlic cloves, and 1/4 tsp white pepper. Marinate for at least 3 hours.

In a separate bowl, mix the batter ingredients: 1/2 cup cornstarch, 1/4 tsp white pepper, and 1/4 tsp onion powder.

Coat the marinated chicken evenly in the cornstarch mixture and let it rest for 5 minutes to allow the coating to adhere.
