  • 1 tbsp Calabrian chili paste (adjust for heat)
  • 0.75 cup Heavy cream
  • 0.5 cup Mozzarella cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 3 Garlic (minced)
  • 2 tbsp Olive oil
  • Fresh basil (to taste)
  • Salt (to taste)
  • Black pepper (to taste)

Steps

  1. 1

Boil rigatoni in a large pot of salted water until al dente according to package directions.

  2. 2

Drain the pasta and set aside.

  3. 3

Heat 2 tbsp olive oil in a large skillet over medium heat.

  4. 4

Add 3 cloves of minced garlic and sauté for 1 minute until fragrant.

  5. 5

Stir in 1 1/2 cups tomato sauce and 1 tbsp Calabrian chili paste.

  6. 6

Simmer the mixture for 3–4 minutes to let the flavors meld.

  7. 7

Pour in 3/4 cup heavy cream and whisk until the sauce is smooth and a vibrant orange color.

  8. 8

Add 1/2 cup grated parmesan and 1/2 cup shredded mozzarella.

  9. 9

Stir until the cheeses are completely melted and the sauce has thickened.

  10. 10

Toss the cooked rigatoni into the skillet.

Notes

Adjust the amount of Calabrian chili paste based on your spice tolerance. For a thinner sauce, you can reserve a splash of pasta water before draining.
