While the potatoes bake, heat the remaining olive oil in a skillet over medium heat. Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened and fragrant.

Add the ground chicken to the skillet. Break it into small pieces with a wooden spoon and cook for 6–8 minutes, until no pink remains and the chicken reaches 165°F (74°C). Do not add salt for a baby serving; mild spices may be added for adults or older children.

Add the mushrooms and sweet pepper to the cooked chicken. Sauté for 3–4 minutes, until the vegetables soften and most excess moisture has evaporated.

Remove the foil from the potato base. Spread the chicken and vegetable mixture evenly over the softened potatoes.
