Ingredients

  • 2 chicken breast (boneless, skinless, cut into bite-sized pieces)
  • salt (to taste)
  • black pepper (to taste)
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp butter (unsalted)
  • 4 clove garlic (minced)
  • 1.5 cup heavy cream
  • 0.5 cup parmesan cheese (freshly grated)
  • 12 oz penne pasta (cooked al dente)
  • 1 tbsp fresh parsley (chopped, for garnish)

Steps

  1. 1

Season the bite-sized chicken breast pieces with salt, black pepper, and garlic powder, ensuring even coverage.

  2. 2

Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

  3. 3

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  4. 4

Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes to slightly thicken.

  5. 5

Stir in the grated parmesan cheese until melted and the sauce is smooth.

  6. 6

Add the cooked penne pasta and the cooked chicken back into the skillet. Toss thoroughly to coat everything in the creamy sauce.

  7. 7

Garnish with fresh parsley and serve immediately.

Notes

For the best results, use freshly grated parmesan cheese as it melts much smoother than pre-shredded varieties. If the sauce is too thick, add a splash of pasta water.
