Steps
Put the sugar in a skillet and heat it over medium heat. Stir occasionally for about 3 minutes, or until it has completely melted.
Add the hot water to the melted sugar and mix well so the caramel becomes a little runny.
Remove the caramel from the heat. Pour it into the dish you will use to cook the flan and spread it well around the sides. Set aside.
Put the shelled eggs, evaporated milk, sweetened condensed milk, vanilla extract, and cream cheese in a blender.
Blend the mixture for 1 minute, until smooth.
Strain the mixture and pour it into the caramel-coated dish.
Cover the dish with aluminum foil.
Place a cloth in the bottom of a pot and set the dish with the flan on top. Add water until it reaches halfway up the dish to cook the flan in a water bath.
Cover the pot and cook in a water bath for 1 hour.
Insert a knife to check for doneness; if it comes out completely clean, the flan is cooked.
Remove the dish from the pot and let the flan cool to room temperature for about 30 minutes.
Refrigerate the flan overnight.
The next day, unmold the flan to serve.
Notes
The can sizes, mold size, and amount of water for the water bath are not specified; add enough water to reach halfway up the dish. The description indicates that this is a no-bake recipe.
