Ingredients

  • 1 cup Oat flour (can be substituted with almond flour for better texture)
  • 2 scoop Vanilla protein powder (approximately 60g)
  • 0.5 cup Creamy natural peanut butter
  • 2 tbsp Maple syrup
  • 1 tsp Vanilla extract
  • 2 tbsp Plant-based milk (dairy-free, use as needed for consistency)
  • Sea salt (a pinch)
  • 0.5 cup Dark chocolate chips (for the topping)
  • 1 tsp Coconut oil (to melt with the chocolate)

Steps

  1. 1

Place the oat flour, protein powder, peanut butter, maple syrup, vanilla extract, and a pinch of salt in a food processor.

  2. 2

Process the mixture until a smooth dough forms. If the dough is too dry, add plant-based milk one tablespoon at a time until it is manageable with your hands.

  3. 3

Divide the dough into 6 equal portions and form donut-shaped rings with your hands.

  4. 4

Place the donuts on a tray and freeze for 15 minutes to firm up.

  5. 5

Meanwhile, melt the dark chocolate chips with the coconut oil in the microwave in 30-second intervals, stirring until smooth.

  6. 6

Dip each chilled donut into the melted chocolate until fully or partially coated.

  7. 7

Return the donuts to the refrigerator or freezer for a few minutes until the chocolate hardens before serving.

Notes

They can be stored in the refrigerator for the entire week or in the freezer in an airtight container for longer shelf life.
