Ingredients
- cottage cheese (use the entire container; the exact quantity was not provided)
- vanilla skyr (entire container)
- honey (optional, if the dessert should be sweeter)
- erythritol (optional, instead of honey or sugar)
- sugar (optional, instead of honey or erythritol)
- vanilla extract (optional, a few drops to enhance the vanilla flavor)
- 0.5 miarki vanilla protein powder (optional)
- 4 rice cakes (crush or crumble)
- 3 tbsp shredded coconut (about 3 tablespoons; the author used 3–4 small heaping tablespoons. Also use a little for sprinkling over the top)
Steps
- 1
Transfer the cottage cheese to a bowl. If you do not like lumps, you can blend the cottage cheese on its own first; the author left it lumpy.
- 2
Add the entire container of vanilla skyr and mix thoroughly with the cottage cheese.
- 3
If you want a sweeter dessert, add honey, erythritol, or sugar. Optionally, add a few drops of vanilla extract to enhance the vanilla flavor, then mix again.
- 4
Optionally, add half a scoop of vanilla protein powder and mix it into the mixture.
- 5
Add 4 rice cakes and thoroughly crush them into the mixture, then mix everything again.
- 6
Add about 3 tablespoons of shredded coconut, or 3–4 small heaping tablespoons, and mix.
- 7
Shape the dessert and taste the mixture, adjusting the sweetness if needed.
- 8
Sprinkle a small amount of shredded coconut over the top.
- 9
You can eat the dessert immediately or refrigerate it for about an hour. After chilling, the mixture will firm up and the dessert will have an even better texture and flavor.
Notes
The exact quantities of cottage cheese and skyr were not provided; the author mentions using the entire container of each. The dessert can be served immediately, but it tastes best after chilling for about an hour.
