Crispy Honey Garlic Butter Chicken

- 2.5 lb chicken thighs (2-3 lbs used)
- 2.5 stalks green onions (white parts only for marinade; green parts reserved for garnish)
- 1 tbsp garlic (minced)
- 1 tbsp Shaoxing wine
- 1 tbsp soy sauce
- 1 tbsp chicken bouillon powder
- 1 tbsp oyster sauce
- 1 tbsp honey
- white pepper (dash)
- cooking oil (splash for marinade, plus more for frying)
- 1 cup potato starch
- 2 tbsp corn starch
- salt (to taste)
- 2 tbsp butter (used in equal parts with garlic and honey for glaze)
- 2 tbsp garlic (minced, for glaze)
- 2 tbsp honey (for glaze)

In a large bowl, combine the chicken thighs with the white parts of the green onions, 1 tablespoon minced garlic, Shaoxing wine, soy sauce, chicken bouillon powder, oyster sauce, 1 tablespoon honey, a dash of white pepper, and a splash of cooking oil.

Mix all the seasonings thoroughly with the chicken and let it marinate for 15 minutes.

In a separate shallow dish, whisk together 1 cup potato starch, 2 tablespoons corn starch, and salt.

Coat both sides of each piece of marinated chicken in the starch mixture, dusting off any excess.

Place the coated chicken in the fridge to set for 15-20 minutes.

Heat a pan of oil to 350°F (175°C).

Fry the chicken pieces, turning to ensure both sides are evenly browned and crispy. Remove the chicken and set aside.

In a clean pan, combine equal parts butter, minced garlic, and honey.

Bring the mixture to a low simmer, then add the fried chicken back into the pan.

Coat both sides of the chicken equally in the glaze and let it cook for 2-3 minutes.

Notes
The recipe calls for 'equal parts' butter, garlic, and honey for the glaze; 2 tablespoons of each is a standard estimation for this volume of chicken. Resting the breaded chicken in the fridge helps the coating adhere better during frying.
