Ingredients
- 4 salmon fillets (4 ounces each)
- 4 tsp olive oil
- 4 tsp lemon juice
- 1 tbsp capers (drained)
- 1 tbsp Dijon mustard
- 2 garlic cloves (minced)
- 0.5 tsp dill weed
- 0.5 tsp dried thyme
- 0.25 tsp salt
- 0.125 tsp cayenne pepper
Steps
- 1
Place each salmon fillet on a double thickness of heavy-duty foil (about 12 in. square).
- 2
In a small bowl, combine the olive oil, lemon juice, drained capers, Dijon mustard, minced garlic, dill weed, dried thyme, salt, and cayenne pepper.
- 3
Spoon the herb-mustard mixture evenly over each salmon fillet.
- 4
Fold the foil around the fish and seal tightly to create four individual packets.
- 5
Grill the packets, covered, over medium heat for 10-15 minutes or until the fish flakes easily with a fork.
- 6
Open the foil packets carefully to allow steam to escape before serving.
Notes
The capers provide a burst of flavor. Using heavy-duty foil is important to prevent tearing on the grill.
