Ingredients

  • 4 bone-in pork chops (thick-cut, patted completely dry)
  • 1 tbsp olive oil (for searing)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt (to taste)
  • coarse black pepper (to taste)
  • 0.33 cup honey
  • 0.25 cup soy sauce
  • 4 cloves garlic (finely minced)
  • 1 tbsp Worcestershire sauce
  • 0.5 cup chicken or beef broth
  • fresh thyme (sprigs for garnish)

Steps

  1. 1

Pat the pork chops completely dry with paper towels to ensure a proper sear.

  2. 2

Season both sides of the pork chops generously with salt, black pepper, garlic powder, and onion powder.

  3. 3

Heat the olive oil in a skillet over high heat.

  4. 4

Add the pork chops to the skillet and sear for 2–3 minutes per side until a gorgeous golden-brown crust forms.

  5. 5

In a medium bowl, whisk together the honey, soy sauce, minced garlic, Worcestershire sauce, and broth until smooth.

  6. 6

Arrange the seared pork chops in the bottom of your slow cooker.

  7. 7

Pour the glaze mixture completely over the top of the chops.

  8. 8

Cover and cook on LOW for 4–5 hours (or HIGH for 2–3 hours) until the meat is incredibly tender.

  9. 9

Carefully remove the pork chops from the slow cooker and set aside.

  10. 10

Pour the remaining liquid from the slow cooker into a saucepan.

  11. 11

Simmer the liquid over medium heat for 5–7 minutes until it reduces into a thick, glossy, caramelized sauce.

  12. 12

Return the chops to the slow cooker and spoon the velvety glaze heavily over the top so it clings perfectly to the meat.

  13. 13

Scatter a few fresh sprigs of thyme across the top for garnish.

  14. 14

Serve piping hot over a bed of mashed potatoes or rice.

Notes

For the best results, ensure the pork chops are patted very dry before searing to achieve a deep crust. Serve with mashed potatoes or rice to soak up the extra glaze.
