Ingredients

  • 2 tbsp olive oil (for heating the pot)
  • 1 leek (trimmed and sliced)
  • 2 cup carrots (sliced)
  • 1 cup celery (sliced)
  • 2 tbsp garlic (minced)
  • 3 tbsp ginger (freshly grated)
  • 1 tbsp ground turmeric (be generous for anti-inflammatory benefits)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt (to taste)
  • black pepper (to taste)
  • 4 cup chicken bone broth
  • 4 cup low sodium vegetable broth
  • 0.5 tbsp chicken bouillon powder
  • 2 chicken breasts (about 1.5 lb)
  • 3 bay leaves
  • 2 zucchini (chopped)
  • 0.75 cup pasta (small shape preferred)
  • 1 can coconut milk (13.5 oz / 400ml; use full can for creamier broth)
  • 0.5 cup lemon juice (freshly squeezed)
  • 0.25 cup fresh parsley (chopped, for garnish)

Steps

    Heat up olive oil in a large pot over medium heat.

    Add the sliced leeks to the pot and sauté until they have softened.

    Add the carrots and celery. Let them sweat for a few minutes.

    Stir in the minced garlic and grated ginger. Cook until they become aromatic.

    Add the turmeric powder, dried thyme, dried oregano, salt, and pepper. Stir well, making sure to scrape the bottom of the pot so the seasonings don't stick.

    Pour in 4 cups of chicken bone broth and 4 cups of low-sodium vegetable broth.

    Stir in the chicken bouillon powder for extra flavor.

    Add the 2 whole chicken breasts and 3 bay leaves to the pot.

    Bring the liquid to a boil and cook for about 10 minutes, or until the chicken is fully cooked through.

    Remove the chicken breasts from the pot and set them aside to shred.

    Add the chopped zucchini, 3/4 cup of pasta, and the coconut milk to the pot. (The author recommends using the whole can for a creamier broth).

Notes
