Weights are estimates. Together, the ingredients weigh about 940 g before cooking, which is about 60 g per serving.
Steps
Preheat the oven to 350°F (180 °C) (175°C (350 °F)). Line a 9 × 9-inch baking pan with parchment paper.
In a large bowl, whisk together the almond butter, maple syrup, whole egg, egg yolk, and vanilla extract.
Add the cocoa powder and whisk again until the brownie batter is fully combined.
Transfer the batter to the prepared pan. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out mostly clean.
Remove the brownies from the oven and let them cool in the pan for at least 20 minutes.
Once the brownies are slightly cool, combine the chocolate chips and non-dairy milk in a microwave-safe bowl. Melt in 30-second bursts, stirring between bursts as needed, then stir until the ganache is smooth and combined.
Pour the ganache over the brownies and top with rainbow sprinkles (or rainbow coated chocolate chips).
Transfer the brownies to the refrigerator for 1 hour, or until the ganache is firm.
Remove the brownies from the pan and cut into squares. Enjoy right away or store in the refrigerator for later.
Notes
Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months; defrost in the refrigerator or at room temperature. For a vegan version, replace the egg with a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water) and use dairy-free chocolate chips. For a lower-sugar version, use sugar-free chocolate chips and reduce the maple syrup, replacing some with a sugar-free sweetener if desired. The article refers to a seven-ingredient recipe, but the structured ingredient list contains nine entries, including separate ganache and topping ingredients; the structured list is followed here.
