Slowcooker Sticky Honey Cashew Chicken

Ingredients
- 3.5 chicken breasts (cut into chunks; 3-4 breasts)
- 2 tbsp dark soy sauce
- 2 tbsp light soy sauce
- 1.5 tbsp honey (1-2 tbsp)
- 1 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 onion (cut into chunks)
- 2 peppers (cut into chunks)
- 3 spring onions (chopped chunky)
- pepper (pinch)
- cashews (handful)
- 4 garlic cloves (minced)
- 1 tsp ginger purée (or fresh ginger)
- 100 ml chicken stock
- 2 tbsp cornflour (heaped, used to thicken at the end)
- 2 spring onions (for serving, chopped)
- 1 tbsp sesame seeds (for serving)
- 600 g basmati rice (cooked, for serving)

Add the chicken chunks, dark soy sauce, light soy sauce, honey, hoisin sauce, rice vinegar, onion chunks, pepper chunks, chunky spring onions, pinch of pepper, handful of cashews, minced garlic, ginger, and chicken stock to your slow cooker.

Cover and cook on HIGH for 3–4 hours or LOW for 7–8 hours.

Once the cooking time is complete, stir through the 2 heaped tablespoons of cornflour to thicken the sauce.

Add another handful of cashews for extra crunch and some fresh spring onions if desired.

Serve the chicken over a bed of fluffy cooked basmati rice.

Finish the dish by garnishing with chopped spring onions and sesame seeds.
Notes
Adding the cashews at the start helps flavor the sauce, but adding a second handful at the end provides a nice textural crunch. The nutrition estimate of 480 calories per serving includes the rice.
