Crispy Garlic Butter Smashed Potatoes
These potatoes are boiled until tender, smashed flat, and roasted until incredibly crispy on the outside while remaining fluffy inside, all finished with a savory garlic butter and fresh parsley.

Ingredients
- 1.5 lb Baby potatoes (Yellow or red baby potatoes work best)
- Salt (For boiling water and seasoning)
- 2 tbsp Olive oil (For roasting)
- 3 tbsp Unsalted butter (Melted)
- 3 Garlic (Cloves, minced)
- Black pepper (To taste)
- 1 tbsp Fresh parsley (Chopped, for garnish)

Place the baby potatoes in a large pot and cover with cold water by at least an inch. Add a generous pinch of salt to the water.

Bring the water to a boil over high heat, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

While the potatoes boil, preheat your oven to 425°F (220°C) and lightly grease a large rimmed baking sheet with olive oil or line it with parchment paper.

Drain the potatoes and let them sit in the colander for a few minutes to steam dry. This helps them get crispier in the oven.

Place the potatoes on the prepared baking sheet. Use the bottom of a sturdy glass, a potato masher, or a fork to gently press down on each potato until it is about 1/2 inch thick.

Drizzle the smashed potatoes with olive oil and season with salt and black pepper.

Roast the potatoes in the oven for 25-30 minutes, flipping them halfway through, until the edges are deep golden brown and very crispy.

Notes
For extra flavor, you can add a sprinkle of grated Parmesan cheese during the last 5 minutes of roasting. Ensure the potatoes are as dry as possible before smashing to achieve maximum crunch.
